Ingredients

8 quart jars
  • 24 cupschopped tomatoes (skinned)
  • 3 cupschopped jalapeno peppers
  • 3 cupschopped bell peppers
  • 4 cupsother peppers (Cubanelle, Anaheim, Sweet Banana, etc)
  • 6 cupschopped onion
  • 3-4 cupschopped celery
  • 2 cupswhite vinegar
  • 2 cupsapple cider vinegar
  • 3 Tbsppickling salt
  • 6 Tbspwhite sugar
  • 1 Tbspminced garlic
  • 2 Tbsppaprika
  • 1 Tbsporegano
  • 1large can tomato paste (13oz)

Steps

  1. 1

    Place batches of tomatoes in boiling water for approx 20-30 seconds. Immerse in ice water & peel off skins.

  2. 2

    Roughly chop tomatoes & squeeze off excess liquid before placing in large heavy pot.

  3. 3

    Add all other ingredients & boil. Reduce heat to medium-low & simmer for 1 hour or until thick enough to coat spoon.

  4. 4

    Fill and seal jars.

Extremely spicy ... if you want it milder, use more bell peppers & less of the others!
