Searching online for a recipe I decided to take a little hint from each one I looked up. The use of coconut oil to grease the bottom so nothing stuck was brilliant. Combinations to make porridge taste better is the key!

Cooking Instructions

Grease your inner pot with butter or coconut oil. I put the sauté on to melt the oil for a few seconds to cover the bottom of the pot.

Pour in 1 cup of steel cut oats and 3 cups water, alternatively you can cook 2 cups steel cut oats with 6 cups water for a double batch.) I also add a pinch of salt and this is where you can add the cinnamon sticks or even a half teaspoon of cinnamon powder.

Cook on High Pressure for 6 minutes and allow pressure to release naturally. Give it a stir.

Steel cut oats are still great for meal prep, you can make it ahead and refrigerate for the week. Refrigerate in small containers. To heat up, you can microwave about a minute or heat up on the stove with a little liquid, to loosen. Then stir in milk or soy and add your favorite toppings. I added nuts, milk, blueberries and a tsp of peanut butter to the pic below.

Note 1 - Vanilla yogurt and Maple Blueberry Topping - Put a handful of blueberries and 1 tbsp maple syrup in a small pan and heat gently until they soften. Mix 2 tbsp greek yogurt with a few drops of vanilla extract and spoon over hot porridge.Top with the blueberries and syrup.

While still hot I divide into 5 containers and put in fridge so I can just microwave on way out the door. The oatmeal continues to thicken once in fridge. A super quick recipe I found online.. But I've changed the cheeses around and combined them. I use what I have as long as it's 12 Oz of grated cheese. I haven't used mozzerella though, just because it's too stringy. There is something that cannot be changed. Don't use the pre-shredded cheese in a bag as it makes the Mac and cheese gritty. Ok, since this was the first time I made this in the IP, I figured it would need a couple/few more attempts before being worthy to put on Cookpad. I was very wrong. But that is basically why I have no step photos this time. I had not planned on publishing it from the start. The broth was "over the top" and the Ox Tails perfectly cooked, so I had to share. The leftover broth I used the next day to make Ramen! It turned out so good. We used the crusty bread, ripped in pieces, to soak up the broth. I wanted to do something different from noodles or rice. It worked perfectly, but rice or noodles would be fine also. I might try this with short ribs, I think they would work great in this.NOTE - a lot of Ox Tail recipes ask you to soak, and then par boil the tails. I did none of that, just so you know.
