20- Cups of Water
2-Pounds of Beef Bone
5-Pounds of Chuck Roast (Diezmillo en troso or Chuck Steak)
1-Large Onion or 2-Medium
1-Whole Garlic
10-Medium Bay Leaves
10-Carrots ( add half the carrots first. This will help enhance the broth flavor.
10-Guajillo Chiles or California/ New Mexico
3- Tablespoons Chicken Boullion
1-Tablespoon Salt

Grind all the dry spices in your grinder of choice:
4-Guajillo Chiles + 1 extra for infusing
2-Bay leaves
1/2- Tablespoon Oregano
1/2-Tablespoon Chicken Bouillon
1/2-Teaspoon Pepper Corn or 1/2-Teaspoon Black Pepper
1/4- Teaspoon Ground Clove or 2-Cloves
1/2-Teaspoon Granulated Garlic Powder
1/4-Teaspoon Sugar
1-Cup Canola or Vegetable Oil - 3
For Spicy oil add
10- Chiltepines or 1/2- Teaspoon Cayenne Pepper
4-Puya ChilesToppings
1/2- Chopped White Onion
1/2-Bunch Chopped Cilantro
1/4-Finely Chopped Green Cabbage
Lemon or lime to taste

Big, filling tofu tacos, with the same amount of protein per taco with tofu instead of ground beef, here is how:A pound of beef contains 117 grams of protein and 1/3 fat. A pound of tofu contains 40 grams of protein and no fat. Replacing beef fat with tofu adds 13 grams of protein, to 53 grams. Instead of 2 tablespoons of beef in a taco, I put 3 tablespoons of tofu in, and you get the same amount of protein.The same flavor, texture and color as fresh ground taco beef, but with silken egg tofu in fresh tacosauce instead, with black refried beans, cashew cheese, cold slaw, onion, avocado, tomato, jalapenos, parsley and taco sauce on top. Plus the protein of the cashew cheese, and the protein of the refried beans.Great for a summer garden dinner after a long hot day, unlimited tacos for lots of hungry people. They can be made very easily so they're great for busy mornings.Don't let the milk overflow the baking cup. If the gratin is loose, add some cheese. You can use any ingredients you like - frozen mixed seafood, bacon, green beans, etc. - whatever you have in the refrigerator.
