Ingredients

2 servings
  1. 7 ozshort pasta (I used orecchiette)
  2. 7 ozGreek feta cheese
  3. 1red onion (preferably Tropea)
  4. 2 clovesgarlic
  5. leavesfresh basil
  6. 1 jarpitted black olives
  7. 20cherry tomatoes

Steps

  1. 1

    Cut the tomatoes in half after washing them under running water and place them in a pan with the garlic and a splash of oil.

  2. 2

    Sauté them in the pan for a few minutes, add the basil leaves, and season with salt; turn off the heat.

  3. 3

    Meanwhile, cook the pasta in plenty of salted water, drain it al dente, and toss it in the pan with the tomatoes and basil.

  4. 4

    In a bowl, place the drained olives, diced feta, and sliced onion.

  5. 5

    Combine the pasta and, after mixing everything together, let it rest for about ten minutes.

  6. 6

    Add a splash of raw oil, give it a final stir, and place in containers to take away.
