I came up with this recipe when I noticed I had some cooked sweet potato and wasn't sure how to use it, along with some potato, ham, and cream cheese. I think it turned out to be a delicious recipe that everyone really enjoyed.

2cooked potatoes
1/2 cupsweet potato (about 100 grams)
2eggs
salt
pepper
1little cream cheese
1little ham
1little cheddar cheese
breadcrumbs
flour
oil for frying
sauce
Homemade tomato sauce
1little Tabasco or sriracha sauce (optional)

Cook the potatoes and sweet potato in the microwave, then mash them. Season with salt and pepper, and add one of the eggs.

Mix well until everything is combined. Take a portion and flatten it; then place a small piece of each cheese and ham in the center, close it up, and shape into croquettes.

Dip each croquette in egg and flour, then again in egg and breadcrumbs.

Fry and serve with homemade tomato sauce or your favorite sauce.
