Ingredients

  1. 1 tinlight unsweetened coconut milk
  2. 2limes, zested and juiced
  3. 3/4 cupchia seeds
  4. Handfulchopped spinach
  5. 1 tspmaple syrup + more to taste
  6. Optional tsp spirulina or moringa for added nutrients
  7. Toppings: Mango or other tropical fruit, berries, toasted coconut flakes, granola or nuts

Cooking Instructions

  1. 1

    Blend the spinach, maple syrup, lime juice and coconut milk (and spirulina) until smooth.

  2. 2

    Mix with chia seeds in a large bowl and refrigerate, splitting into 4 individual jars if desired.

  3. 3

    Chill for at least 2 hours, ideally overnight.

  4. 4

    Serve with desired toppings.
