Add 3/4 cup of butter to pot on medium heat add diced garlic.

Add an equal amount of flour (3/4) cup.

Mix till it turns to paste (thickening agent) let sit on low.

In separate pot add milk 2 Cups and add white wine (optional) and let simmer.

Add simmered milk to pot with roux and stir.

Let mixture thicken while stirring frequently.

Add finely chopped chives.

Add cheeses fontina, cheddar, parmesan, mascarpone.

Add salt and Pepper. Then mix

In separate bowl add butter (few tablespoons) and panko bread crumbs and let cook on stove (low) till crispy.

Put mac and cheese in deep dish pan with bread crumbs on top for 20-25 mins at temperature that you prefer.

Everything is already cooked, goal is to melt and make top crispy.
