Rice cake kalathappam

1.Wash and soak rice for an hour and then grind it with cardamom,cumin,scraped coconut,baking soda,a pinch of salt and boiled rice with required water and prepare a smooth batter.

.Boil the jaggery with 4-5 tbsp of water until dissolved.Strain and then add to the batter.Mix well and keep aside.

3.Now heat a small pressure cooker(3 ltr)and add a tbsp of ghee.Fry the coconut flakes and sliced shallots until golden brown.Take out some to sprinkle on top and leave the rest.

4.Now pour the prepared batter to the cooker and close the lid.Do not place the whistle.Cook on high flame for a minute and then reduce the flame to low and cook it for 10-12 minutes.Switch of the flame and rest until cool.

5.Now open the lid and insert a knife to check whether it's done or not.If the knife comes out clean your Kalathappam is ready. Carefully take it out from the cooker and place it on serving plate.It would be really soft and wobbly in texture.Slice and enjoy this healthy and traditional snack with your family and friends ☺️
