#cookpaddessert #Traditional #rainbowweek4 #yellow. I am basically belongs to bihar india. I was very fond of chandrakala from childhood. Whenever i go to native place (BIHAR-INDIA)and saw eat on shop, my mouth-watering starting. I was always stubborn for this recipe. Finally my mummy learn how to cook this recipe and always fulfilled demand of my chandrakala. I was fascinated with this recipe due to beautiful looking, delicious in taste and very nutritious (mava-made of milk). My god please try it once you will also crazy for it. It is believed that king Chandragupt maurya ( emperor of magadh )Chandrakala is a very beautiful and royal Indian sweet usually made during Diwali and Holi in North India. It is quite similar to the humble Gujiya but richer in taste and looks. The outer covering is made of maida and the filling is a mix of dry fruits and mava. It is fried and then dipped in sugar syrup. It is also called Rasbhari Chandrakala because when you bite into it you can taste the sugar syrup and sometimes it might drip down also.

Ingredients

8 servings
  • For mava
  • 1 litremilk
  • 2 tbspsugar
  • 2 tbspkaju(casho) chopped
  • 6thread kesar(saffron) soaked in milk
  • 1 tspcardamom powder
  • For dough
  • 2 cupMaida/All purpose flour
  • 1/2 cupghee
  • as neededWater
  • 1/2 kgghee for fry
  • For chasni
  • 2 cupsugar
  • 1 cupwater
  • 1 tspcaradom powder
  • 6thread kasar(saffron)

Steps

  1. 1

    Take heavy bottom pan. Heat the milk in a pan on medium heat. once it comes to a boil, let it simmer and reduce on medium-low flame. Keep stirring after every 3-4 minutes.

    Keep stirring and keep cooking, till it becomes solid or dense like halwa. You will feel that it will take little effort for stirring. Now mix chopped kaju and cardamom powder. At this time, turn off the stove heat.

    Now take another bowl.Add ghee and maida, mixed properly. See on picture. Now add small quantity of water, mixed it. Now knead the dough well.Roll to a thin sheet, cut with a  lid.

    To make chandrakala : Take 2 circles.add 2 tsp stuffing in the center.nn

    Cover with another circle, press at the edges to seal completely.Pinch fold continuously to get pattern like this.Now to make chandrakala : Take a circle, add 2 tsp of khoya stuffing.Fold from one side, press and seal the edges.Pinch fold continuously to get pattern like this.

    Repeat to finish the dough.

    Take sugar in a pan,add water to it.Add saffron strands.Heat it up, boil until it reduces and forms a sticky syrup. No need to check for string consistency.Set aside.

    Heat ghee in a kadai, add 2-3 at a time, fry until golden brown.Cook in low medium flame.

    Drain and then add it to warm sugar syrup.Turn over  and let it soak for 5 mins, then remove it from syrup and arrange it in a plate.

    Our chandrakala beautiful looking and delicious in taste is ready for serve.
