If you're wondering what kind of Kimchi I used & are in the US, I bought it on Amazon. During the Pandemic, I turned to the internet for my Kimchi fix, & I'm so glad I did. It's homemade in Portland Oregon & sent out in sealed bags with freezer packs. It's also fermented with transit time in mind, so it arrives in perfect condition. I recommend transferring it into large canning jars upon arrival, & placing into the fridge. It's absolutely delicious! Search Choi's Kimchi Co. on Amazon.
