In a bowl, combine the egg, sugar, cinnamon, vanilla, and margarine. Mix well.

Once combined, add the grated apple and oats. Mix again.

Add the flour and sifted baking soda (or baking powder) to the mixture.

Line a baking sheet with parchment paper or a silicone baking mat. Place spoonfuls of dough onto the sheet. You can use your hands to form balls or use an ice cream scoop, then flatten them to shape. If you don't have parchment paper, you can use plain white paper brushed with oil as a substitute.

Bake the cookies at 350°F (180°C) for 20 minutes. You can bake them a little longer if needed, but watch closely so they don't burn. Remove from the oven and let cool.
