During the Coronavirus crisis, I was shielding and unable to go shopping. There were zero delivery windows available on any supermarket website and so kindly, my daughter got me some bits while she was out and her boyfriend dropped them outside my house. Ingredients

  • 1 packchopped chorizo
  • 1 packchicken breast or thigh chopped into pieces
  • 2 tinschopped tomatoes
  • 1courgette (chopped)
  • 1/2 headbroccolli (chopped)
  • 1 tbspmixed herbs
  • 1red or orange pepper (chopped)
  • 1large red onion (chopped)
  • 1 clovegarlic
  • Small pack green beans
  • 1/4 pintred wine (optional)
  • 2 tbspchicken gravy granules
  • (Please note: the green vegetables could be replaced with any other vegetables - cauliflower, peas, broad beans etc)

Steps

  1. 1

    Sweat the onions, garlic & pepper in a frying pan with a small amount of oil until softened.

  2. 2

    Add the chicken & fry until browned.

  3. 3

    Add the courgette to the frying pan & fry until slightly browned (this will prevent the courgette becoming sloppy during slow cook).

  4. 4

    Put the gravy granules in a jug and add 1/4 pt boiling water.

  5. 5

    Transfer contents of frying pan to a casserole pot.

  6. 6

    Add all other ingredients (inc. stock) to the casserole pot & give a thorough stir to ensure everything is combined.

  7. 7

    Cook in the oven on Gas Mark 4/350F/177C for approximately 30 minutes (stirring half way through).

  8. 8

    Taste a piece of the chicken to ensure it's cooked through. Serve with vegetable cous cous or rice.
