A delicious and very easy to make pasta, with olive oil and lemon juice and smoky flavours it’s a delicious dish a taste of summer on a plate.

In a large frying pan pour in some oil and fry the pancetta until crispy. Take out and set aside.

Whilst the pancetta is frying, prepare all the veggies and chorizo!

In the same frying pan throw in the onion, chorizo and garlic and fry until soft!

Next add the pepper, chilli and lemon.

Boil a pan of salted water and add the pasta cook for 12 minutes or how ever long it states on the packing,

Throw in the spinach, once the pasta is cooked add it to the frying pan stir well and add a little of the pasta water, a drizzle of olive oil and salt and pepper to taste.

Serve with the grated cheese and the crispy pancetta on the top!
