CARB CRAVING?
It’s all too easy to prize open a packet of pasta and smother it in a rich creamy sauce.
Eating large amounts of refined carbs, typically present in traditional pasta, can lead to weight gain and nutrient deficiencies. Traditional pasta is stripped of most of its vitamins and minerals during processing, leaving it with little nutritional value.
Pasta is high on the glycemic index, which can leave you feeling lethargic.
Vegetables such as carrot, mooli, courgette, squash, cucumber, onion, apple, cabbage, celeriac are low on the glycemic index and will help you feel energised.
Courgette is a such a ‘good’ carbohydrates; high in fibre, helps burn fat and can decrease cholesterol. Courgette contains 90% less calories and 80% less fat than spaghetti and is one of the least calorific vegetables with just 17 calories per 100g. It is also high in potassium, an essential mineral for a healthy heart.
For those wishing to increase their intake of vitamins or trying to lose weight, try swopping your white spaghetti for courgetti (spiralized courgette). Whilst courgette contains much less fat than traditional pasta, you’ll still feel full because of the high water and fibre content.

Spiralize the courgette and carrot. If you don't have a spiralizer use a peeler and shave into long strips.

To make the sauce, crush 3-4 anchovies and a little of the oil with the garlic, olives, tomatoes and the dried chilli and cook for 2-3 minutes.

Steam or drop the courgette and carrot in boiling water for 1 minute (cook too long and they will soak up too much water and become mushy).

Drain the courgette and carrot, add the sauce, combine and serve adding a few shredded basil leaves.
