#budgetbasics Made Kuku Paka today (Coconut Chicken Curry) which is a traditional East African dish. This goes well with Mahambri which is a Swahili doughnut and is very popular in Tanzania.

There are many different versions of it, but mine is simple and turned out to be delicious!

Ingredients

  1. 1 tbspmince ginger
  2. 1 tbspmince garlic
  3. 2 tbspmince green chillies
  4. 500 gdiced chicken
  5. 2 tspturmeric powder
  6. 400 gcoconut milk
  7. 1 cansweetcorn
  8. 3 tbspoil
  9. 1lemon(juice)

Cooking Instructions

  1. 1

    Stir minced ginger, garlic, chilli in oil till fragrant

  2. 2

    Add diced chicken (or you can use chicken on bone). Add 2 tsp turmeric so chicken is yellow.

    Simmer till chicken is cooked and add coconut milk, sweetcorn.

  4. 4

    Boil it for another 5-10 mins. Turn off the stove.
    Add coriander leaves and lemon juice
    Enjoy!

My word I miss Kenya now. I had this curry in Nairobi just 1 1/2 month ago. Good food.
