Kuku paka

#budgetbasics Made Kuku Paka today (Coconut Chicken Curry) which is a traditional East African dish. This goes well with Mahambri which is a Swahili doughnut and is very popular in Tanzania.
There are many different versions of it, but mine is simple and turned out to be delicious!

Cooking Instructions

Stir minced ginger, garlic, chilli in oil till fragrant
- 2
Add diced chicken (or you can use chicken on bone). Add 2 tsp turmeric so chicken is yellow.

Simmer till chicken is cooked and add coconut milk, sweetcorn.
- 4
Boil it for another 5-10 mins. Turn off the stove.
Add coriander leaves and lemon juice
Enjoy!

Remove from the heat and let the mixture set until it is cool enough to handle.The original kue is made from white glutinous rice flour with coconut milk. Klepon is one of market munchies, famous in Indonesia and neighboring countries (Malaysia, Singapore, Brunei). When I was growing up, some also call this onde-onde, even though most people living in Java island would associate onde-onde with another type of snack/dessert. Taste-wise, it is like mochi, with liquid palm sugar inside. Needless to say, you have to be careful when eating klepon since you can stain your clothes if you squirt the palm sugar. I cut the palm sugar carefully so not all will melt inside the klepon. If you want a more authentic taste, boil the klepon 2-3 minutes more after it floats to have a liquid filling.This recipe yields 15-20 klepons, depending on how big/small you form the balls.
