Ingredients

  1. Paste
  2. 1 teaspoonsugar
  3. Handfulfresh coriander- stalks and leaves
  4. 1 tbspnfish sauce (soy sauce will do if you can’t get fish sauce)
  5. 1lime - zest
  6. 1/2lime - juice
  7. 1onions
  8. 1spring onion
  9. 1thumb size piece of ginger
  10. 1thumb size piece of garlic
  11. 1large chilli - I used red but green good too
  12. 1tspn ground coriander
  13. 1tspn ground cumin
  14. 1 piecelemongrass or 1 teaspoon lemongrass paste
  15. 1 tbspnolive oil
  16. Grind black pepper
  17. Curry
  18. 500 gchicken breast cut into chunks
  19. 1 tincoconut milk (400 milk)
  20. 1/4 tinwater - use coconut milk tin
  21. 1 tbspnsalt
  22. Fresh green veggies - I pre cooked fine green beans and tenderstem broccoli before adding them to the curry at the end. Any green veg will do
  23. Garnish
  24. 1spring onion chopped small
  25. 1large red chilli for garnish
  26. 1 handfulcoriander
  27. Lime wedge
  28. Serve with Jasmin rice

Steps

  1. 1

    Blitz all the paste ingredients together till you get a smooth paste. Then fry the paste in a drizzle of olive oil for a couple of mins. Then add the chicken breast and cook for another few mins till brown.

    Then add the coconut milk, water and salt. Stir and simmer for 10/15 mins or so till fragrant and chicken is cooked through. Add cooked veggies the end and serve over Jasmin rice and garnish. Easy and yummy !!

Made this last night and it was a big hit with the family. I was looking for an authentic Thai Green curry taste and with this recipe I've found it.
I de-seeded the chilli's except 4 or 5 seeds so there was not too much heat.
I couldn't get Tenderstem broccoli so just served with fine green beans. Could probably have used peas instead. Mango chutney is nice with.
