Fluffy No-Yeast Rolls

Burger and sandwich rolls are usually made with yeast to get that super fluffy texture. But when you can't find yeast at the store, I searched for alternatives and found several recipes using baking powder instead. These are extra quick to make, with no kneading or waiting required.
They're very soft and fluffy, with no crust, but a bit more bread-like than traditional yeast rolls. They're still delicious and perfect for sandwiches, burgers, or hot dogs.
You can brush the tops with a little beaten egg before baking, or (like I did) with some melted butter after baking to give them a nice shine.
You can also sprinkle oregano, rosemary, thyme, garlic powder (either before baking with the egg or after with the butter), or top with sesame seeds or other seeds.

Ingredients

8 rolls
  • 3 cupsflour (about 375 grams)
  • 2 teaspoonssugar (about 8 grams)
  • 1 teaspoonsalt (about 5 grams)
  • 3 teaspoonsbaking powder (about 12 grams)
  • 1 cupplain yogurt (about 240 grams)
  • 1/2 cupoil (about 120 ml)
  • 1/4 cupwater (about 60 ml)
  • 2 tablespoonsbutter (about 28 grams)

Steps

    In a bowl, mix together the dry ingredients.

    In another bowl, mix the yogurt with the oil. If your yogurt is thick (like Greek yogurt), add the 1/4 cup water to thin it out a bit.

    Add the wet ingredients to the dry ingredients and mix until a dough forms. It's okay if the dough is a little sticky.

    Shape the dough into rolls in your desired shape. To make shaping easier, rub a little oil on your hands. The rolls will rise as they bake, so keep that in mind when shaping. For burgers, shape them like small patties. This shape also works well for sandwiches. For hot dogs, shape them into longer rolls, and for dinner rolls, make them round like small balls.

    Bake at 350°F (180°C) with convection (or 400°F/200°C without convection) for about 20 minutes. As soon as they come out of the oven, brush with a little melted butter and, if you like, sprinkle with salt and herbs.
