Heat the oil in a wide pot and brown the beef in batches to prevent the oil temperature from dropping. Place the browned pieces on a platter.

Score the onions with a cross and caramelize them in the same oil over medium heat for 15 minutes. Deglaze with the brandy, wine, and vinegar.

Add the beef, the whole tomato scored into quarters, all the spices, and the tomato paste with the sugar.

Simmer for 1 hour and 30 minutes. Season with salt and pepper in the last half hour. Serve with potatoes or rice.
