Ingredients

15 minutes
2 rolls
  • 4eggs
  • 1pickled jalapeño (chopped)
  • 4round cut bacon
  • 2bread rolls/4 slices bread
  • 50 ggrated white cheddar
  • Butter (for frying and spreading)
  • 4 tablespoonmilk
  • Optional--chopped spring onion for garnishing

Steps

15 minutes
  1. 1

    In one pan, fry the bacon and set aside

  2. 2

    Mix the eggs, milk and cheddar and add to another pan on a very low heat for the egg to scramble really slowly. It allows for the cheese to melt but not burn

  3. 3

    When the eggs are about 60% cooked, add the jalapeño and mix in

  4. 4

    Toast the rolls or bread and butter them

  5. 5

    Layer the bacon then eggs on the roll and serve while hot.
