In a large bowl, combine the vegetable oil, olive oil, and sugar. Whisk for 3-4 minutes until the sugar starts to dissolve. Dissolve the baking soda in the orange juice (hold the cup over the bowl as it will foam), then pour it into the bowl. Add the salt and all the spices, mix well, and gradually add the flour. Knead until you have a soft, pliable dough that doesn’t stick to your hands.

Let the dough rest for 30 minutes, then shape the cookies into any form you like.

Bake with convection at 340°F (170°C) for 20 minutes.
