Burgos Blood Sausage Toast with Goat Cheese and Caramelized Onion

Slice the baguette on a diagonal into pieces about 1/4 inch (5 mm) thick and toast on both sides. Cut the piquillo peppers into strips, and slice the blood sausage and goat cheese log as desired. Preheat the oven to 350°F (180°C).

Slice the onion into thin strips and gently sauté in a skillet with a little oil, the brown sugar, and salt until golden and caramelized.

Top each toasted bread slice with strips of piquillo pepper, then add a slice of blood sausage, a slice of goat cheese, and some caramelized onion. Place in the oven and heat for about 4 minutes. Enjoy!
