Who hasn't enjoyed a comforting rice stew in the winter—or even in the summer? It feels like our kitchen isn't complete without making a simple and delicious rice stew at least once. I'm sharing my way of preparing it with you.

Who hasn't enjoyed a comforting rice stew in the winter—or even in the summer? It feels like our kitchen isn't complete without making a simple and delicious rice stew at least once. I'm sharing my way of preparing it with you.

Finely chop the onion, garlic, and red bell pepper. Sauté them in a pot with a little sunflower oil.

Add the beef, cut into small pieces, and the carrot, peeled and diced. Stir and cook over low heat for 2 minutes.

Season with black pepper, paprika, oregano, and salt to taste. Mix well and cook over low heat for 5 minutes, until the meat is lightly browned.

Add the tomato puree and boiling beef broth. Let the mixture come to a boil.

Add the rice, stir, and cook until the rice is al dente and most of the broth has been absorbed (about 20 minutes). Turn off the heat and cover the pot for 2 minutes.

Before serving, add the chopped parsley and mix.
