Ingredients

  • 2 lbscatfish cut into strips
  • Approximately 3 cups buttermilk
  • 4eggs
  • 1-2 tbspCreole seasoning
  • 2 cupsCorn meal
  • 2 cupsFlour
  • 1 tbspBaking powder
  • Veg oil for frying

Steps

  1. 1

    Soak strips in buttermilk overnight

  2. 2

    Mix flour and baking powder together

  3. 3

    Mix eggs and 1 cup buttermilk in bowl

  4. 4

    Mix corn meal and Creole seasoning

  5. 5

    Dredge in flour mixture, then egg mixture, then corn meal. Fry in vegetable oil til golden brown
