This is my favourite dish in our Pakistani cuisine, and it's very easy and quick to make if you have cut the okras before hand.
So I make my favourite parathas with this dish which makes the meal complete and if you put a small bowl of fresh yogurt besides, it will definitely be tastier than any restaurant food.
You can always add the spices according to your choice and I prefer a little extra oil for cooking this dish as gives me satisfaction 😝 so you can adjust it according to your wish.

Ingredients

20 minutes
2 person
  • 1/2 kgOkra (bhindi)
  • 3medium onions sliced thicker
  • 2large onions finely chopped
  • 4-5green chillies
  • 5 tbspyogurt
  • to tasteSalt
  • 1 1/2 tspred chilli powder
  • 1/2 tspchilli flakes
  • 2 tspcrushed dry pomegranate seeds
  • 2 tspcrushed coriander
  • 1/2 tspgaram masala powder
  • 1/4 tspturmeric powder
  • 2 tbspwater
  • 1/4 cupoil (or as desired)
  • For garnish:
  • A fewfreshly chopped coriander leaves

Steps

20 minutes
  1. 1

    Wash and cut the bhindi according to you choice and deep fry in a wok for 2-3 minutes. Remove in a colander.

  2. 2

    Meanwhile in a separate wok or cooking pot, add some oil and sliced onions. Shallow fry the onions till nice golden brown.

  3. 3

    Then add the chopped tomatoes and green chillies and mix properly. Then add 2 tbsp yogurt and mix.

  4. 4

    Add the fried Okras and all the spices. Mix well. Cook for 5 minutes and then add the rest yogurt. Mix and turn off the flame.

  5. 5

    Garnish and serve hot with homemade fresh parathas and yogurt.
