Ingredients

6 servings
  1. For the filling
  2. 1 1/3 lbsground beef (about 600 grams)
  3. 1 cupricotta cheese (homemade or store-bought is fine; I'll share my homemade recipe soon)
  4. 3 1/2 ozcooked ham (about 100 grams)
  5. 7 ozfresh cheese or mozzarella (about 200 grams)
  6. 1egg
  7. 1onion
  8. Nutmeg, to taste
  9. For the tomato sauce
  10. 2 cupsdiced tomatoes (use whatever kind you have; I used one round tomato and some cherry tomatoes)
  11. 1medium onion
  12. 3large garlic cloves
  13. 1 cupwater
  14. Olive oil
  15. Salt, pepper, and spices, to taste
  16. For the dough
  17. 4eggs
  18. 1 cupwater
  19. 2 tablespoonscream cheese
  20. 1 tablespoongrated cheese
  21. 2 teaspoonsxanthan gum
  22. 1 teaspoonpsyllium husk
  23. 3 tablespoonsflaxseed meal or any flour you have
  24. Salt and pepper, to taste

Steps

    For the dough, blend all the ingredients in a blender.

    Add the water and blend for a few more seconds, then let the mixture rest for 10 minutes.

    In a skillet with a little oil, pour a tablespoon of the batter and spread it out evenly. Cook over low heat, and patiently flip it once it's cooked on one side.

    For the sauce, sauté the chopped onion and garlic in a skillet, then add the tomatoes and a cup of water. Season to taste and let it simmer until slightly reduced, about 20 minutes over medium heat.

    Set the sauce aside and, once cooled, blend it until smooth.

    Cook the ground beef with the chopped onion and season to taste.

    Add the egg, nutmeg, and a pinch of salt to the ricotta cheese and mix well.

    In a greased oven-safe dish, layer the dough sheets to cover the bottom, then add a layer of tomato sauce.

    Add the cooked beef, another layer of dough, the ricotta mixture, more sauce, ham, and fresh cheese. Top with more sauce and freshly grated cheese.

    Bake at medium heat for about 25 minutes.

Me encanta cocinar, es mi terapia, llevo un estilo de vida #cetogénico #keto hace 2 años, solo utilizo harinas de nuez, linaza, 🥥, 🌻 almendras o semillas altas en grasas y bajas en carbohidratos, nada de azúcar y casi nada que crezca debajo de la tierra.
