For the dough, blend all the ingredients in a blender.

Add the water and blend for a few more seconds, then let the mixture rest for 10 minutes.

In a skillet with a little oil, pour a tablespoon of the batter and spread it out evenly. Cook over low heat, and patiently flip it once it's cooked on one side.

For the sauce, sauté the chopped onion and garlic in a skillet, then add the tomatoes and a cup of water. Season to taste and let it simmer until slightly reduced, about 20 minutes over medium heat.

Set the sauce aside and, once cooled, blend it until smooth.

Cook the ground beef with the chopped onion and season to taste.

Add the egg, nutmeg, and a pinch of salt to the ricotta cheese and mix well.

In a greased oven-safe dish, layer the dough sheets to cover the bottom, then add a layer of tomato sauce.

Add the cooked beef, another layer of dough, the ricotta mixture, more sauce, ham, and fresh cheese. Top with more sauce and freshly grated cheese.
