Kokkinisto is usually a reddened sweet Greek stew using tomato and red wine as a Main base then slow cooking with beef or lamb.
I’ve tried this dish many times and as lovely as it is, I just wanted to elevate it a bit more by using fillet steak and the tomato & Red wine as a reduced sauce.#newcookschallenge

Ingredients

2 people
  1. 2x 16oz Fillet steak
  2. 3 stickscelery roughly chopped
  3. 1 clovecrushed garlic
  4. 3carrots
  5. 1onion
  6. 2 tablespoonsdried oregano
  7. 300 mlGood quality red wine
  8. 1 Tinchopped tomatoes
  9. 500 mlpassata
  10. 1vegetable stock cube crumbled
  11. 1 tablespoonsugar
  12. Salt
  13. Pepper

Cooking Instructions

    In a pan sauté the onions until soft.Add the red wine and reduce to about a tablespoon.Add the garlic,carrots,celery,oregano and sugar and cook for about 5 minutes.Add tin tomatoes & passata and stock cube.Bring them to the boil then simmer gently.

    After simmering for about 1 hour,sieve the sauce into a clean pan,giving you a clean smooth sauce.Simmer gently and adjust seasoning to taste.

    Oil the fillet steak and season with salt & pepper and sear the beef to your liking.Cover and rest.

    Present the steak on a plate of silky mash potatoes and sliced carrots,Then pour the smooth sweet sauce on top.
