Steps

Put semolina and curd in a mixing bowl.

Mix it well and also add required amount of water to make a smooth batter and rest it for minimum 20-30 minutes.

Mix salt and baking soda in it.

Heat a tadka pan and put oil in it and then add mustard seeds or punch phoran in it. I have added punch phoran. When they crackle then add curry leaves and switch off the flame. Mix it to the batter.

Mix all the veggies including chilli and ginger and mix chilli powder, black pepper powder and salt together.

Grease a idli stand with oil and put batter in it and put veggies on it and steam it in a cooker or in idli maker for 7-8 minutes in medium flame.

Now your idlis are ready. Serve hot with sambhar and chutney.
