In a food processor, add the almonds and grind them well until they become powder.

In a large bowl, add the almond powder, salt, and baking soda. Mix all the dry ingredients together.

In another bowl, add the tahini, honey, vanilla, and olive oil, and mix the wet ingredients together.

Combine the dry ingredients with the wet ingredients and knead for a short time until you have a uniform mixture that doesn't stick.

Take a small portion of the mixture and shape it into a small ball with your hands. In a bowl, add sesame seeds and dip the ball so that the sesame covers it all around.

Place on a large baking sheet lined with parchment paper. Gently press down with your fingers on top to shape it.

Repeat the same process until the mixture is finished. Space the balls out on the baking sheet because they will spread during baking.

Bake in a preheated oven at 350°F for 10 minutes until they get a little color, no more.
