Steps
- 1
In a medium bowl add flour, baking powder, baking soda and salt. Put the oregano into the flour mixture and mix all together.
- 2
In a big bowl put 1 tbs olive oil and yoghurt. Mix the wet ingredients into the dry ingredients to form a sticky dough, a smooth and soft dough that does not crumble and that is not too sticky. If the dough is too sticky than add additional flour,1/2 tbs at a time, as needed. If the dough is too dry add water, 1/ 2 tbs at a time, as needed. There's no need to knead this dough, that will make the dough too tough. Divide into 6 equal sized balls.
- 3
On a well floured surface, roll each dough ball out into a thin 10 inch circle. Place 1 ball on a floured work surface and using a rolling pin or an empty bottle, roll out the dough until it is about 1/4 inch thick.
- 4
Heat a large cast iron skillet, heat over medium heat for 10'. There's no need to oil or butter the skillet. There are dry cooked. Transfer the rounded dough onto the heated pan and cook 1 1/2 - 2 1/2 min until the bottom browns & bubbles appear.
- 5
Flip and cook for an additional minute or so on the other side. Brush on top with Olive oil or Garlic olive oil or buter with garlic powder or fresh garlic sauted until fragrant. Give a generous sprinkle with parsley. Keep aside.Cover with kitchen tea towell.
- 6
Repeat for the remaining dough circle. Pile them up in a serving plate, Separate each with a round Parchment Paper. Cover the flatbreads with a kitchen towell to keep them warm.
- 7
Store any leftover Flatbread in an airtight plastic container or plastic bags for 4-6 days. These are easily reheated in the cast iron pan for just a few seconds per side. 😗Happy cooking
