Blend the onion, celery, carrot, and garlic. Add a little water if needed to blend.

Add a little oil to a skillet and cook the vegetables until they turn light brown.

Add the ground beef. Season with salt and pepper. Cook until browned.

Add the tomatoes and cook until most of the liquid evaporates. When this happens, add water again. Add the thyme and bay leaf. Repeat this process about 2 more times. This helps intensify the flavors. Taste the sauce and adjust the salt if needed.
