In a mixing bowl whisk butter/ghee and sugar till creamy with a hand whisk.

Sift flour, baking powder, baking soda and half of the coconut. Gently knead into dough.

Make into small balls and roll over desiccated coconut. Press slightly and arrange on a baking tray leaving gap between the cookies to expand.

Bake at 180°C for 15-20 mins. Cool on a wire rack and store in an airtight container.
