Puff Pastry Bananas with Rum Caramel

I love tarte Tatin, and these puff pastry bananas are very similar. At least in how they're prepared, since I swapped the traditional dough for puff pastry. The result is a sweet, crispy dessert.

I love tarte Tatin, and these puff pastry bananas are very similar. At least in how they're prepared, since I swapped the traditional dough for puff pastry. The result is a sweet, crispy dessert.
Steps
- 1
Roll out the puff pastry on a floured board. Slice the bananas in half lengthwise and cover the back of each with a piece of puff pastry (see photo). Press gently and set aside.
- 2
Place the sugar, vanilla, and rum in a small saucepan and cook to make caramel.
- 3
When it starts to turn golden, add the rum. Cook a few more minutes, then pour onto a baking sheet and place the bananas on top, puff pastry side up.
- 4
Brush the pastry with the beaten egg.
- 5
Bake in a preheated oven at 400°F (200°C) for about 15 minutes.
- 6
Remove from the oven once the pastry is cooked and carefully take out the bananas.
- 7
Place on a dessert plate and serve immediately.
- 8
Serve with whipped cream, plain yogurt, or vanilla ice cream.
