FOR THE SAUCE: In a small pot, add a splash of oil and gradually add the halved tomatoes, garlic, and onion. Stir constantly until they change to a charred color (with black spots and bright colors). Add only 2 tablespoons of water, cover, add the cilantro, and let it simmer for 10 minutes.

In a blender, add the sauce ingredients and blend until you have a smooth and well-mixed sauce. Check the seasoning and set aside (keep warm for assembly).

In a small pan, add 1 teaspoon of oil and fry the tortillas until golden. Keep them near the heat.

Crack the two eggs into a bowl, add a pinch of salt, and set aside. Place a pan over low heat, and once hot, add 1 tablespoon of oil. Add the cracked eggs and cook to your liking (well done or with a soft yolk), then remove from heat.

FOR ASSEMBLY:

On a plate, place the two fried tortillas, cover them with beans, cheese, and bacon, and place the fried eggs on top of these ingredients.

Drizzle with hot red sauce and give the plate a slight tap so the egg is completely covered.

Finally, add the cilantro chiffonade, serrano pepper rings, and avocado slices on top.
