Ingredients

  3. 4 sprigscilantro, washed and sanitized (cut into chiffonade)

  5. 2tortillas
  6. 3 stripsbacon (baked or fried)
  7. 1/2fresh organic avocado
  8. as neededfresh cheese (to taste)

  12. 1/2white onion

Cooking Instructions

    FOR THE SAUCE: In a small pot, add a splash of oil and gradually add the halved tomatoes, garlic, and onion. Stir constantly until they change to a charred color (with black spots and bright colors). Add only 2 tablespoons of water, cover, add the cilantro, and let it simmer for 10 minutes.

    In a blender, add the sauce ingredients and blend until you have a smooth and well-mixed sauce. Check the seasoning and set aside (keep warm for assembly).

    In a small pan, add 1 teaspoon of oil and fry the tortillas until golden. Keep them near the heat.

    Crack the two eggs into a bowl, add a pinch of salt, and set aside. Place a pan over low heat, and once hot, add 1 tablespoon of oil. Add the cracked eggs and cook to your liking (well done or with a soft yolk), then remove from heat.
