Multi grain thepla recipe

This soft flatbread from the vibrant state of Gujarat is typical breakfast or travel food of the locals. The original thepla recipe only uses whole wheat flour and gram flour or besan, adding fenugreek greens or methi leaves enhances its taste and nutrition.
To further enhance the taste and nutrition of this popular snack I have added multigrain flour, flax seeds and sesame seeds.
You may use your combination of flours and green vegetables to suit your taste buds or nutrition needs.
Here we are using methi leaves or fenugreek leaves. You may add grated bottle gourd or lauki, grated carrots, chopped spinach etc.
Thepla is best enjoyed on its own, however a combination of thepla with mango pickle and chai is a great hit.
To make it a complete meal I serve Multigrain theplas with mix vegetable, curd and pickle.

Steps

In a wide bowl, mix all the flours with flax seed powder, sesame seeds and salt.

Add the fenugreek leaves (or grated lauki if methi is not available), green chilies, ginger paste and curd.

Knead a soft dough using some water. Cover the dough and keep aside for 15 minutes to rest.

Heat a cast iron skillet. Pour 2 drops of ghee on the skillet and wipe with a cloth or tissue.

Now, pinch out lemon size portions of the dough. Make a ball and flatten them. Using the dry flour roll out the dough.

Cook on the hot skillet using ghee. Serve hot with pickle and curd.
