I had some raspberries left over from the risotto I made and it's rather summer like here, so I started thinking about past summer holidays. One year when we went to France, we went to a tiny pub like place that was so small, it had only 4 tables. I ordered a duck liver salad which came with a raspberry dressing. It was amazing. So I decided to make it for myself. It'll lift any salad to a new level 😍 #fruit #condiment #dressing

  • More or less to taste:
  • Handfulraspberries - washed
  • 2 tablespoonsolive oil
  • 1 tablespoonhoney
  • 1 tablespoonwhite wine vinegar

    Prepare your ingredients

    Add to a jug and whizz up with a hand blender

    Sieve to remove any bits

    Enjoy with your favourite salad. Will keep in an air tight container in the fridge for a few days
