Ingredients

  1. 1 tbspoil
  2. 1 1/2 lbsskinless, boneless chicken thighs, fat trimmed and cut into 1 inch pieces
  3. 1medium onion, chopped
  4. 1red bell pepper, cut in 1 inch pieces
  5. 1 tspminced garlic
  6. 1 (15 oz)can chicken broth
  7. 1 (15 oz)can diced tomatoes
  8. 1 tbspsmoked paprika
  9. 1/2 tspsalt
  10. 3 cpeeled sugar pumpkin or butternut squash (about 1 lb), cut into 1 inch cubes
  11. 8 ozfresh green beans, cut in half
  12. 1 tbspcornstarch
  13. 1/4 ccreamy peanut butter

Steps

  1. 1

    Heat the oil in a large saucepan over med- high heat.

  2. 2

    Add the chicken and sauté for 4 minutes or until browned.

  3. 3

    Remove to a plate and cover to stay warm.

  4. 4

    Reduce heat to medium, then add onion, bell pepper, and garlic and sauté 4 minutes until softened.

  5. 5

    Add the 1 1/2 cups broth, the tomatoes, paprika, and salt and bring to a boil.

  6. 6

    Add the chicken back in, the pumpkin, and beans.

  7. 7

    Reduce heat, cover and simmer 12 minutes or until chicken and pumpkin are tender.

  8. 8

    Meanwhile, stir remaining broth, cornstarch, and peanut butter in a bowl until smooth.

  9. 9

    Add peanut butter mixture to pot and stir until blended.

  10. 10

    Cook for 2 minutes or until thickened and serve.
