Ingredients

  1. 1/2 cupunsalted butter, softened
  2. 1 cupand 1/3 cup sugar, divided
  3. 1large egg, beaten
  4. 1/4 cupmolasses
  5. 2 cupsflour
  6. 2 tspbaking soda
  7. 1 tspcinnamon
  8. 1/2 tspsalt
  9. 1/4 tspground cloves
  10. 1/8 tspground ginger
  11. 1/3 cupfinely chopped crystallized ginger

Cooking Instructions

    Beat butter and 1 cup sugar until creamy. Add egg and molasses, mix well.

    Whisk flour, soda, cinnamon, salt, cloves and ginger in bowl. Stir in crystallized ginger.

    Mix dry ingredients with wet ingredients 1 cup at a time. Chill dough in refrigerator 30 minutes-1 hour.

    Preheat oven to 375. Roll dough into 1" balls and roll in sugar. Bake for 8-10 minutes.
