Ital Soup/Stew with Herbs and Scotch Bonnet 🌱

'Ital Soup' is one of my favorite ever soup recipes. With loads of veg, herbs and spice, If I had to pick a recipe that most summed up my cooking, I think it might be this one! Traditional Ital recipes include one-pot stews , incorporating local and seasonal produce, this is my take using the veg that is local and in season.
This is actually more of a stew and should be enjoyed with the veg served in large chunks, topped with a little broth. Like most soups, the recipe is not an exact science and you can sub the veg to make good use of local and seasonal produce. You must use the herbs, ginger, garlic and scotch bonnet though, this is the magic!
Rastafarian food is based on natural, fresh, plant-based produce. Ital comes from the word ‘vital’ and plants are considered necessary for good health. Yams are considered to be highly nutritious but you can add any squash, sweet potato and greens. Traditionally callaloo (delicious, but hard to get) is used for the greens, but kale, chard, sprouting or any seasonal veg works well. You can also add coconut milk but I prefer it without and I use lentils to get a creamy broth. I was taught to make this many years ago by a really good cook. Despite making it for years, yet I am still surprised every time at how delicious it is! #mycookbook

Steps

  1. 1

Wash peel and chop the veggies. Stud the onion with the cloves so that they can be easily removed..

  2. 2

Add the lentils to a large pan of water and bring to the boil. Skim the froth from the lentils (this will make the soup bitter) and give them a whisk. Add the garlic, ginger, yam and potatoes and simmer for around 10 minutes.

  3. 3

Add the remaining veggies (apart from the greens) thyme, bay and clove studded onion and simmer until the veg are soft and cooked to your liking, adding the greens towards the end of the cooking time. Your scotch bonnets peppers should sit on the top and you can dunk them or fish them out to get the desired level of spice! When the vegetables are cooked, remove the dry herbs, add a few extra fresh and enjoy!

@rachel_madewithplantsI love to cook vegan, seasonal, plant-based dishes. For me, cooking is fun and I particularly love a challenge! I’ve always loved to cook, but it wasn’t until I became vegan that I became really excited about creating recipes. I realised that the old cooking ‘rules’ were not rules at all and you can be as creative and imaginative with food as you like; I’m a true veg lover and I’m known for trying to ‘veganise’ anything and everything 🌱

Interesting take on this, but it's not authentic. Trust me, no Jamaican would eat your soup. Never. Watch a real Jamaican cook soup on YouTube or similar forum, then you'll understand.
Sorry, got to be honest.
