Ingredients

5 - 10 mins
Serves two
  1. 2large handfuls of salad leaves
  2. Around four tomatoes (diced)
  3. 3 teaspoonsgreen pesto
  4. Dried basil
  5. Sprinkle of cumin
  6. Sprinkle of smoked paprika
  7. Teaspoonapple cider vinegar
  8. Teaspoonrapeseed/ olive oil
  9. Beans (from a can - have about two handfuls in total)
  10. Chickpeas
  11. Black beans
  12. Kidney beans

Steps

  1. 1

    Wash the salad leaves and put them in a bowl with the diced tomatoes. Stir in the pesto. Next wash and drain the beans.

  2. 2

    Heat the oil in a frying pan on a high temperature, on the same heat add in the beans, cumin, paprika and cider vinegar.

  3. 3

    Once the beans are sufficiently cooked take them off the heat. Put your salad leaves in two bowls. Then pour the beans on top of the salad.

  4. 4

    Sprinkle with basil if you wish. And now you are done - yay!
