I been in the mood for some lamb. No one serves it anymore around here.
Cooking Instructions

Remove netting from the lamb. Wash and peel the carrots. Slice the carrots and slice the larger potatoes. Preheat oven 375°Fahrenheit.

Sear the lamb. Add seasonings and water to the lamb and pot. Season fatty side with white pepper and lean side with black pepper.

Add the balsamic vinegar. The picture shows the spices in the Italian seasonings. Surround the leg with carrots and potatoes. Add the sliced shallots. Drizzle olive oil over the lamb.

Add the olives and put into the oven for 45 minutes covered. After 45 minutes uncover the pot sprinkle kosher salt on top of lamb and vegetables. If you have a convection oven turn it on for 15 minutes if not continue to roast for 30 minutes. Let rest 10 minutes serve I hope you enjoy!!!!

I served this with a flavourful meal, of, Jasmine corned Rice, conk peas, squash, Navajo fried bread, and corn on the cob. The lamb was flavoured, mainly by the woods and charcoal that smoked it. This is why I listed the woods used. It gave a little flavouring but let the lamb taste like lamb. skunkmonkey101 -

I've tried this recipe sous vide and smoked. I like the smoked texture better than sous vide, which is too soft for my liking. I finish this on the grill to get that char and all the crispy bits. If you dont want to use the smoker/grill, this would easily work in an oven. A reduction of balsamic vinegar with some beef umami really step the flavor up. Frying the herbs and spices give the lamb a texture amd flavor that far surpasses typical mint jellies. This recipe is one to break out and impress a group of people. This takes roughly 5 hours from start to finish, so plan accordingly. Lance Wilson -
