A lighter option than potatoes, it works as a side dish or, if you add protein, it can be the main course.

Cut the cauliflower into florets and cook in salted water.

Once cooked, drain and place on 2 sheets of aluminum foil, shaped like a tray or spread out to wrap later. Add the butter, pepper, sour cream, and grated cheese (it's better if it's a mix of several kinds).

Add the optional ham, or you can include mushrooms, leftover grilled meat, cooked ground beef, jalapeño or poblano pepper strips, chopped hard-boiled egg, or any cold cuts.

Bake for 15-20 minutes until the cheese is melted and bubbly. Let cool slightly before serving, dress as desired, or enjoy as is. Add optional chives or cilantro for a fresh, green touch.
