Grilled Chicken Breast with Quinoa Tabbouleh

Tabbouleh is a traditional Arab salad made with bulgur, which is cracked wheat that has been partially cooked. In this version, I used quinoa. I love it served with grilled chicken breast.

Tabbouleh is a traditional Arab salad made with bulgur, which is cracked wheat that has been partially cooked. In this version, I used quinoa. I love it served with grilled chicken breast.

Measure and cut all the ingredients for the recipe. Mix the spices and season the chicken. Rub the chicken breasts with olive oil and let marinate for 30 minutes. Heat a grill pan well and grill the chicken breasts. Let cool.

Bring the water to a boil in a pot. Add the quinoa and cook over low heat for about 12 minutes, then turn off the heat. Let it rest and cool. Whisk together the dressing ingredients. In a salad bowl, mix the quinoa with the vegetables and cilantro. Add half of the dressing and mix well. Add goat cheese if desired.

Serve the quinoa tabbouleh with the chicken breasts and drizzle the remaining dressing over the chicken.
