Ingredients

8-10 servings
  1. 1 kgMutton Bone-in
  2. 1/2 kgBroken Wheat or Daliya
  3. 2 tspSalt or to taste
  4. 3-4Onions thinly sliced and fried
  5. 1/2 cupGhee
  6. 2 tbspRed Lentils or Masoor Daal
  7. 2 tbspYellow Lentils or Moong Daal
  8. 2 tbspBengal Gram or Chana Daal
  9. 2 tbspBlack Gram or Urad Daal
  10. 2 tbspRed Chilli powder
  11. 1/2 tspTurmeric powder
  12. 1 tspBlack Pepper powder
  13. 1 tspGaram Masala
  14. WHOLE MASALAS OR SPICES -
  15. 3Cinnamon sticks small ones
  16. 10-12Black Peppercorns
  17. 5-6Cloves
  18. 1 tspCaraway Seeds
  19. 3-4Cardamoms
  20. 1/4 cupCashewnuts paste
  21. 12-14Fried Cashewnuts
  22. 12Fried Almonds
  23. 1small bunch Coriander Leaves finely chopped
  24. 1small bunch Mint Leaves chopped
  25. 1Lemon medium sized cut into Wedges

    Soak all the lentils and the broken wheat overnight. Pressure cook mutton along with all the powdered spices and yoghurt using water as required. Meanwhile, cook the soaked lentils and wheat in a separate pot on a low heat for 20 minutes.

    Grind the cooked wheat and lentils mix until a smooth paste is obtained. Heat Ghee in a cooking pot, add all the whole spices and fry for a minute. Now add the cooked and grinded lentils and wheat mix to it along with the pressure cooked mutton.

    Add deep fried and crushed onions too. Finally add Cashew nut paste to it. Mix well and allow it to cook for 15 minutes more. Add more ghee if required. Garnish with fried nuts and Almonds along with Coriander and Mint Leaves.

    Serve hot with lots of salad alongside.
