Preheat oven to 180’C.

Fry onion and celery till soft. Mix spinach but take off the heat. Add garlic, mustard, seasoning (salt, pepper, thyme, origanum) and pull mozzarella apart and mix into spinach. Let mixture cool down. Beat two eggs and mix into spinach.

Roll pastry into a rectangular shape 2mm thick. Spread spinach evenly over pastry. And then roll pastry into a sausage. Cut into 8 even pieces and place onto a tray with parchment paper.

Beat an egg and egg brush the pastries. Carefully top the pastries with grated cheese.

Bake for 40 minutes and the let cool on a drying rack.

Serve hot/cold with salad and tzatziki.
