Another “knock-up” meal to use up leftover fresh pasta (but works with any pasta) with other ingredients from what’s in the larder.

Add the pasta to a saucepan of boiling, salted water and cook according to instructions to reach al dente by the end of Step 3 below. Drain the pasta through a colander, adding a knob of butter.

Melt the butter in a saucepan and fry the onions on a low-medium heat for 5 minutes. Then add the garlic and celery and continue to fry on a lowish heat for a further 15 minutes or until the onions and celery are softened.

Stir in the rosemary, thyme, paprika and wine, then add the tomatoes and sugar. Stir gently but thoroughly, increase the heat and cook for 10 minutes. Taste and add seasoning as desired.

Add the pasta, stir to ensure well-coated and serve onto hot plates or pasta bowls.

Add Parmesan cheese to taste.
