Wash and scrub the potatoes well. Pat dry them with a clean kitchen towel. Add sugar and olive oil to a mixing bowl.

Add sweet potatoes with the edges cut off. Toss well until coated nicely with the olive oil sugar mix. Bake in a preheated oven on 240° for 35 minutes.

Serve them hot for a lovely wholesome quick fix dinner along with a mug of hot Chocolate. Enjoy!
