‘Chikuwa’ is a tube-shape Japanese fishcake. ‘Chikuwa’ is made from Surimi (fish paste) and it is suitable for many dishes. Today I added ‘Chikuwa’ to the ‘Wakame & Cucumber Salad‘. Instead of using the traditional dressing, I used Japanese Mayonnaise and Wasabi.

Ingredients

  1. 1Continental Cucumber OR 2 smaller ones *about 250g
  2. 1/4 teaspoonSalt
  3. 2-3 tablespoonsDried Cut Wakame
  4. 50 gChikuwa *sliced
  5. 4 tablespoonsJapanese Mayonnaise
  6. 1-2 teaspoonsSoy Sauce
  7. 1 teaspoonWasabi Paste

Steps

    Thinly slice Cucumber into a bowl. Add Salt and massage, then allow to rest for a while.

    Soak Dried Cut Wakame in cold water until soft, drain well.

  3. 3

    Combine Japanese Mayonnaise, Soy Sauce and Wasabi Paste in a mixing bowl. Alter the amount of Wasabi to suit your taste.

  4. 4

    Squeeze the Cucumber to remove excess water, and add to the bowl. Add Wakame and Chikuwa as well. Then mix to combine.

I just googled the difference between japanese and western mayo, it says that japanese mayo uses egg yolks only instead of the whole egg and uses rice vinegar or apple cider vinegar instead of distilled vinegar, and no water is added, therefore thicker and sweeter and richer: sounds amazing to me🥰🥰🥰and then this is my first time to meet with Chikuwa, im really lucky to learn so mzch from you!
