Banana Cake

An over-ripe banana may not be someone's idea of a fruit to be served to guests... but they can certainly be a part of a banana bread (or a banana cake, if that is what you choose).
Three over-ripe bananas mashed well and then a cupful of powdered brown sugar, a tsp of baking soda, a pinch of pink salt, one egg, 3/4th of a cup of pure ghee (though most Westeners will prefer melted butter) mixed and whisked vigorously. Now is the time to fold in plain flour or maida making sure that no ungainly lumps are formed. The batter is now ready to be poured into a baking dish of your choice. I chose a large square one... and this turned out to be a good choice as I got an evenly browned crust all over.
Once the batter has been poured into the baking dish (obviously after greasing it well), choose another banana, make a transverse cut and place the two pieces on the batter. Let the remaining space have a generous sprinkling of almonds and other nuts of your choice.
The oven has to be pre-heated and the baking process needs around 55 minutes at 180 degree C.
Let the cake cool before you attempt to taste it.
