Combine first 7 ingredients in order and mix very well with wooden spoon (to reduce loss of temperature wood is preferred). Gradually add the remaining flour, stirring until the dough forms a cohesive ball and is pulling away from the sides of the bowl. The dough will be slightly sticky but still manageable with your hands. Form dough into a ball.

Transfer dough to oiled bowl and roll it to fully coat it in oil. Cover with plastic wrap. Let rise in warm place for 30 minutes or until doubled in size.

Deflate dough and transfer to a lightly floured surface and knead briefly until smooth.

Prepare pans with nonstick spray, lard or bacon grease. Press dough into pans. Lightly brush surface with olive oil. Add sauce and toppings. Bake in preheated oven at 425°F for 13 to 15 minutes. More toppings may take longer.
